Healthy Tomato Soup



If you are looking for a soup thats healthy , tasty(thats a rare combination) and easy to make, then this is it. You get your daily supply of vegetables in one cup of tomato soup. And tomatoes are good for you. Just a little info-"Tomatoes are packed with lycopene, that can help ward off lung, skin, bladder, and cervical cancer. " Thats copy paste from quality health.com. Ok i will stop lecturing you on healthy food. All those who know me and have seen me knows that i am not the right person to talk abt health. Anyway heres the recipe. You can be sure shot that everyone at home will like it.

Serves -6

1kg tomatoes (that will be roughly 5-6 tomatoes)
2 potatoes
2 carrots
1 onion diced
2tbsp butter/ghee
1tsp whole pepper
1" cinnamon stick
6 cloves
1tbsp sugar
salt as reqd
3tbsp corn flour (opt) (only if the soup is not thick enough)
ground pepper as reqd
bread crumbs (opt)

Boil whole potatoes. Best way to do it is to microwave it for 7minutes for 2 potatoes. Peel the boiled potatoes and cut in to cubes. Shape normally doesnt matter.
Cut carrots in half lengthwise and then to 1" pieces and microwave it for 2 minutes. Shape doesnt matter here as well.
If you dont have microwave, dont worry, you can just cut the pieces , anyway u r gonna cook them and smash them.
Now turn on the stove. Add ghee in the pressure cooker and fry the onion, cloves, cinnamon and whole pepper. Once onion is pale , add potato, carrots and saute for some time. Then add whole tomatoes and 7 cups of water and close the cooker and cook for 2 whistles. Let it cool, open the cooker and strain the water. Put the remaining stuff in a mixer/blender and grind it well. Strain again to remove the seeds. Then add this to the strained water and keep it on stove. Stir to mix thoroughly. Mix the cornflour to 1/2 cup of water and add to the soup, to thicken it. Add fresh ground pepper and bring to a boil, and off the stove.The soup is now ready to be served.
If you want to make bread crumbs, the easiest way is to take a bread slice, cut it to cubes and microwave it from 30-60 secs roughly depending on ur microwave. Add them to your bowl for a grt soup experience.
