Egg Roast


Egg Roast

This is another of my favourites. Done in minutes and grt to taste. Can have it with chapathi, rice or just bread.

2 eggs (as u want)
1 onion
salt as reqd
1/4tsp turmeric pwd
1/4 tsp chilly pwd
1/4 tsp corainder pwd
1/4 tsp garam masala (can substitute with chicken masala)
1/2 tomato diced (opt)
Boil the eggs and remove the shell and cut in half
Saute onion in a pan till they r brown. Add all the powders and saute for 2 minutes. add a little water just to make a little gravy . Now add the egg pieces and stir for some time to get the egg pieces coated with the gravy.

There u go....

Lime Tea


Lime Tea

A great drink after a heavy meal, esp if you had biryani. This used to be a usual in malabar weddings and i just love it.
I will write the recipe for 2 cups of lime tea.

2 cups water
1/2 - 1 tsp tea powder
2tbsp sugar
1tsp lime squeeze

Boil the water in a pan. Add the tea powder to boiling water and off the stove. Add sugar in a pot and strain the tea water in to the pot. Add the lemon squeeze and stir well. Serve hot. Enjoy your lime tea. It will soothe aching stomach and help digestion.

Homestyle Biscuits (something like bread)



Biscuits
This is one of a heart healthy recipe, and easy to make.
2 cup flour
2tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tbsp sugar
2/3 cup low fat buttermilk
31/3tbsp vegetable oil

combine flour, baking powder, baking soda, salt and sugar in a bowl. In another bowl mix buttermilk and oil. Add this to the flour mix and stir well. On a lightly floured surface, kneed the dough gently and roll it to a thickness of 3/4". Cut it using a biscuit cutter. If you dont have one, use a tumbler or something that you find in your kitchen which is wide enough. Transfer it to an baking plate. Preheat oven to 450F and bake it for 12 minutes or until its brown.

I love to make this as its easy and can go with rice, chappathi or even plain bread. And more over i love egg that any dish that has egg is my favourite. So heres the simple way to make egg curry

4-5 eggs (hard boiled and shell removed)
2 onions chopped
2,3 chillies
ginger(opt)
garlic(opt)
salt
1/4 tsp turmeric pwd
1/4 tsp chilly powder
2tbsp coriander powder
1 tsp garam masala
1 tomato chopped (opt)
coriander leaves chopped
coconut milk (opt)

Saute onion in a pan adding 2tbsp oil, Once the onion is cooked add ginger, garlic, chillies, tomato and cook for some time. Then add salt and all powders. Saute for 2 minutes and add a cup of water and let it come to a boil. Now if you are using coconut milk add it. If u r using fresh coconut milk it would be better to add it at the end. I use canned one so i add it before i add eggs. Now cut the boiled eggs in half and put in the pan and cook for 4-5 more minutes and off the stove. There u have a tasty egg curry.

Easy vegetable biryani in pressure cooker

Variety rice is always my passion. I keep on trying and it always ends up as a flop. This is one thats easy and has very little risk of being a flop.
The recipe goes like this

2 cup basmati rice(soaked for an hour and drained)
1 cup vegetables(potato,beans,peas,carrot diced)
2tbsp ghee
1 onion
1 tomato
5 chilly
a few garlic
a small piece ginger chopped
turmeric,chilly,garam masala pwd - as reqd
salt as reqd
corainder leaves chopped (opt)
cashews , raisins (fried in ghee) (optional for garnishing)

Heat ghee in pressure cooker. Add onion,ginger,garlic and fry well. Add all masala pwds and saute well. Add tomatoes, chillies and saute. Then add the vegetables and fry them. Add rice and fry for 5 minutes. Then add 5 glass of water and salt. Close the cooker. Dont put the weight. when the steam comes out of the nozzle, put the whistle and off the gas. Open the lid after 10minutes . Add coriander leaves. It will be a little watery, but will be dry and seperate if left for a while. Add cashews and raisins. Serve to ur loved ones...

Parippu Vada


Parippu Vada

One of mouth watering snacks of all time. I remember when i used to visit my grandma, there was a small shop around the corner and the guy used to make grt parippu vada everyday at 11 am. We could smell it from our veranda, and we used to buy and have them almost everyday. That was a real sweet memory. Now that i make them once in a while and think abt the grt time at grandmas. But since its deep fried i would say make it once in a while.

2 cups bengal gram (chana dal, kadala parippu)
1 onion (chopped)
6 shallots (if u dont have shallots add some more onion)
1/4'" ginger (can substitute with ginger powder or paste)
1-2 green chilly
some curry leaves - opt
corainder leaves - chopped (optional)
1/4 tsp garam masala
salt to taste

Soak the dal for 3 hrs and drain for an hour
Grind 1 3/4 cup of dal in a mixer/grinder/blender to a coarse form. Avoid adding water if possible. Remove the dal to a pot and add all other ingredients. Heat oil. Make balls of the mix and flatten them to patties and fry in oil till golden brown.

Enjoy your parippu vada.. Grt for an evening snack.

Banana Nut Bread



I have long wanted to make bread on my own. I just love the smell of fresh baked bread. So this was my first experiment and it did come well. There are 2 banana nut bread recipe in here. There are lots more ...But the first one is easy and the second one is healthy..So its up to you..which to follow. The first one is sweet the second is not so sweet.

3 Bananas
2 eggs
1 cup sugar
1/2 cup butter
2 cups flour
1tsp baking soda
1tsp baking powder
1/2 cup chopped nuts

Mash bananas. Whip eggs,butter and sugar and add mashed bananas to it. Then add flour to the mix along with baking soda, baking powder and mix gently. Stir in nuts . Preheat the oven at 350F. bake it in the oven for 45-60 minutes, or till the loaf looks done.


Now heres the other recipe, the heart healthy one

3 bananas mashed
1/3 cup low fat buttermilk
1/2 cup brown sugar packed
1/4 cup margarine
1 egg
2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped pecans/ nuts

Preheat oven to 350F. Lightly oil 2 bread loaf pans
Stir together mashed bananas & buttermilk. Cream brown sugar(u can keep it for 30 secs or a bit longer in microwave) and margarine together until light. Beat in egg.Add banana mixture and beat well. Now add flour, baking powder, baking soda and salt. Stir well and add nuts and pour in to pans. Bake for 45-60 mts or a tooth pick inserted in middle comes out well.

Aloo paratha (Potato paratta)


Paratta has been my weakness. I never even thought i will make it one day. And now with this recipe it finds a place on our dinner table atleast once a week. I got it from another site, but like it so much would love u guys to give it a try. This is not the typical aloo paratha u get at restaurants, but it sure dows has that taste and its after all an easy recipe for all u lazy cooks.

3 Potato (medium)
4 cups whole wheat flour (any atta will do)
4 tbsp curd
2 tsp chilly / as u wish
2 tsp garam masala
salt to taste

Boil potatoes in microwave. Thats the easiest way to boil potatoes. Remove the skin and mash then. Add the flour to the mashed potatoes along with all other ingredients and make a smooth dough. If it doesnt form a dough try adding some water if ur dough is dry , or some flour if ur dough is watery.
Make large balls of the dough. Preferably the size of cricket balls. For those who dont know the size of cricket balls, make it the size of a baseball. If u r not a sports person try the size of a tomato..just having some fun..
Flatten the balls to round shape using a belan or a rolling pin, just like chapathi, but make it a bit thick. Now on a skillet fry them on both sides and then apply ghee and fry both sides again. Make sure that the paratha is cooked well before u take them. It might take a little while longer than chappathi. I prefer to make them thin, to avoid the disaster of burning it and not getting cooked. Any how it taste grt and best thing is u dont need to make a curry to go along. Have it alone or with curd and pickle.
Can be used as a breakfast dish or for dinner. For me, i can have it any time given curd and pickle..

Gobi Manchurian (cauliflower manchurian)


Here u have another grt recipe made easy for lazy cooks. I prefer making this once in a while when i get bugged by my own food. So for a special occasion u can take some time and effort. Good dish when u want to impress someone.
Though manchurian is a chinese delight, this is more like a indo chinese version. I got this recipe from my grandmother and cant thank her enough for it.

1 Cauliflower (Keep the flowers and the small stems apart)
4tbsp maida (roughly enough to coat the flowers)
Pepper
salt
1 Onion (big) diced
1 tsp ginger garlic paste (can substitute with cut ginger & garlic)
1 tsp chilly powder
3 tbsp tomato sauce (rough measure)
Chopped coriander/cilantro leaves

Dip the flowers in hot water for 30minutes. Add some salt to the water. Dice the flower stems and keep aside
Drain them and add maida, salt and pepper and sprinkle some water so as to coat maida evenly over the flowers. Deep fry them in oil and keep aside.
Use the same oil in a pan (dont use the entire oil just enough to saute onions) and saute onions and the flowers stems. Once its cooked add the ginger garlic paste and chilly powder. If you r using ginger and garlic, add them with onion itself. Add salt to taste. Add the tomato sauce and saute well. Then add the fried flowers and mix well. Garnish with coriander leaves. Hmm...tasty gobi manchurian. Grt with chappathis...

Pav & Egg Bhurji


This is one of my favourite snack. Its a spicy food and its very easy to make and it fills you up right.










Egg Burji
3 Eggs
1 Onion
2,3 small green chillies
1 tomato
some chopped coriander leaves
salt
Turmeric pwd
Chilly pwd
1tsp garam masala
some oil to saute the above

Break eggs in to a dish and add salt and pepper and beat well and keep aside.
In a pan add some oil and saute the onions & chillies. If you love ginger and garlic, you can add them as well, but i like to keep it simple.Once the onion is golden brown, add tomato, coriander and all powders. Once the tomatoes are cooked, move the contents to the side of the pan and pour the egg in the middle. Let it cook and then saute it all together till egg is also done. It will look like scrambled egg but u c the onions and tomatoes apart as well. whatever..

Now for the pav, get the ready made burgers from shop. Add a little mayonnaise to the inside of each burger and fry in the same pan u used to make burji. Make sure u do that before u wash the pan. This is to get some flavour on to the burger as well. If u dont have mayo, u can use butter or ghee, Or can use plain burger as well.

So there u have pav burji at ur service.

Easy Chappathi


Chapathi is a typical north indian dish. I love to eat chapathi and absolutely hate to make them. I guess there will be quite a few like me. So i found out an easy way to tackle the making process of chapathi. No one actually tells you how much water to add when making a dough, and as far as i am concerned thats the crucial part. So i found a measure..lucky you..heres my recipe for lazy cooks. I tried this with durum atta(absolutely no idea how thats different from regular atta. trust me theres no difference in taste), and it came well. Atta is the indian term for whole wheat flour.

Atta - 4 cups (will give around 13-14 big chapathis).
Water- 1 1/2 cup
Oil - 1tbsp
Salt - as reqd..roughly 1tsp

Mix all the ingredients together as a dough. Kneed them enough so that its soft. Make sure they dont stick to your fingers. If after 8-9 kneeds the dough continue to stick add some more atta. But with this measure i guess that situation wont arise. Once it a soft dough, make small balls out of it, size of golf balls.

Then on a clean flat surface, place each ball, dust them with a little maida/atta/flour and flatten them to a thin round shape (like tortillas, if u dont know what chappathis are, or c picture) using a 'belan' (rolling pin). Then use a skillet to fry them. Turn it both sides till its cooked and then add a little butter/ghee and turn it once again. and u get fluffy chapathis.. If you are health conscious, you can avoid the butter/ghee and it turns out just great. Nowadays i dont add them and I still manage to get soft chapathis...
You can have them with chicken curry, chana curry(chick peas curry), egg curry , gobi manchurian or just indian pickle will be grt.

Some tips
Can use one cup maida and 3 cups atta, if u care for softness more than health.
More maida will make the dough little sticky.
Maida is soft wheat flour and atta is hard wheat or whole wheat flour.
